I am using Oracle CDC Source Connector | Confluent Hub. I don’t want to take all the columns for tables. I went through the documentation but I could find inclusion and exclusion property which helps to filter table. Can this connector filter columns also? Where I can find the configuration for the same?

Look at the ReplaceField Single Message Transform (SMT); there is an field exclusion list.
Also if you are on 2.6+ you can leverage predicates to allow for different replace filter rules based on a matching predicate ([KAFKA-9673] Conditionally apply SMTs - ASF JIRA).
